Healthy Chickpea and Almond Chocolate Fudge

This has to be my favourite chocolate brownie fudge. Did I say it’s a healthy fudge? I am sure you know by now that I love making dessert that is as delicious and healthy as it can be.

I’m on holiday with my family this week and when I’m away I love packing food with me. It’s satisfying and gives me reassurance knowing I have my own food around, its like a safety net. I don’t want to be in a situation where I am hungry and can’t find anything suitable to eat. Don’t get me wrong, I am not super strict with food (I love my weekly croissant with coffee!)

What I love about this fudge is it’s so delicious, dense and jam packed with beautiful ingredients that don’t leave you feeling bloated. As always I use organic ingredients but you can use whatever you have on hand.

Ingredients:

60 g soaked almonds (soaked for at least 8 hours)

1 can chickpeas, drained and rinsed

125 g coconut milk

100 g coconut oil

1 tsp vanilla extract

150 g coconut sugar

60 g raw cacao powder

1 tsp aluminium-free baking powder

100 g flour (I use wholemeal spelt)

150 g dark chocolate (I use 60% dark), roughly chopped - you can replace it with cacao nibs

For the Ganache:

75 g dark chocolate

1 tbsp coconut oil

2 drops doTERRA pure above-food-grade peppermint essential oil

Method:

  1. Preheat the oven to 170 C, grease the baking tray (18 cm or smaller). I don’t use baking paper.

  2. Combine soaked almonds, chickpeas and coconut milk and blend using a food processor.

  3. Add coconut oil, sugar and vanilla extract, pulse until combined.

  4. Add cacao powder, baking powder and flour, pulse until combined.

  5. Add chopped chocolate and gently mix to combine.

  6. Place the mixture in a tin, spread it evenly and press it down slightly. Bake for 30 minutes or until firm. I leave mine in the oven overnight.

Once the fudge is cool, make the chocolate ganache:

  1. Heat coconut oil in small pot on low heat until melted.

  2. Add chocolate and turn the the heat right down or turn it off and let the chocolate melt. I don’t use microwave or a double boiler but I find this method is effective.

  3. Add 2-3 drops only of doTERRA pure above-food-grade essential oil and mix together.

  4. Pour the ganache over the fudge.

  5. Let it cool and cut it into squares.

  6. Enjoy!
